A rich, slow-cooked lamb dish infused with warm Indian spices and creamy yogurt. It’s deeply flavorful, comforting, and perfect for fall.

1.5 lbs lamb (cubed)

½ cup yogurt (room temp)

½ cup red onion (chopped)

3 tbsp canola oil

1½ tbsp ginger-garlic paste

2 tsp Degi Mirch or cayenne + paprika mix

1 tsp coriander powder
-
¼ tsp turmeric
-
Whole spices: 2 cloves, 2 bay leaves, 6 cardamom pods, 1 tsp fennel seeds, 1 whole dry red pepper, 1 piece mace

Salt to taste

5 cups water

Fresh cilantro for garnish
Method

Brown onions in oil (8–10 min).

Add whole spices, ginger-garlic paste, chili paste, coriander, turmeric—sauté 1 min.

Add lamb and cook until no longer pink.

Lower heat and stir in yogurt in 3 batches to prevent curdling.

Add water and salt. Simmer for 5 hours (or pressure cook for 15 min).

Garnish with cilantro and serve with naan or rice.
